How can I transition to a vegetarian/vegan/raw diet?

What does “vegan” mean? How is it different from being a “vegetarian”?

The term vegan (pronounced vee-guhn), was coined in England in 1944 by Donald Watson, co-founder of the British Vegan Society, to mean “non-dairy vegetarian.” Someone who is vegan omits all animal products (e.g. dairy, eggs, meat, fish, honey) from their diet. Vegetarianism is defined by the International Vegetarian Union as “a diet of foods derived from plants, with or without eggs, dairy products, and/or honey.”
