Curry Tomato Spaghetti Squash with Garbanzo Beans and Kale
I had Spaghetti Squash for the first time tonight! It was great. I love how it just breaks down into strings to resemble spaghetti.
This dish is easy and quick to make.
Ingredients:
2 green onions
1/2 cucumber
2 c. of your favorite spaghetti sauce
3 cloves garlic, minced
1 tbsp. curry powder
1 tsp. ginger
1/4 tsp. paprika
1 tbsp. chopped basil
1 can cooked garbanzo beans
1 c. kale
1 spaghetti squash
Directions:

Cut up the green onions and cucumber and set aside.

Put the spaghetti sauce in a saucepan and simmer. Add the minced garlic, curry powder, ginger, paprika, basil, cooked garbanzo beans, and 1 c. cut kale.

Drain the squash and mash the squash until they form strings.

Place some squash on a plate. Spoon the tomato sauce mixture over the squash. Add some chopped green onions and cucumber on top.

I loveeee spag squash, it’s my favorite squash hands down. This looks delicious with the garbanzo beans.
